Recipe of the Week

Chicken and Rice Dinner

1broiler/fryer chicken, cutup
1/4 to 1/3 cup all purpose flour
2 tbsp vegetable oil
2 -1/3 cups water
1-1/2 cups uncooked long grain rice
1 cup milk
1 tsp salt
1 tsp poultry seasoning
1/2 tsp pepper
chopped fresh parsley

1.) Dredge chicken pieces in flour. In large skillet, brown chicken on all sides in oil over medium heat.
2.) In a large bowl, combine the next six ingredients. Pour into greased 13in x 9in x 2in baking dish. Top with chicken.
3. Cover lightly with foil and bake at 350 degrees for 55 minutes or until rice and chicken are tender. Sprinkle parsley before serving.

I had to cook this dish an additional 30 minutes so beware. But the rice was super yummy and the flavor of the whole dish is delicious. You can use whichever type of chicken that you please.
